Grilled Veggie French Onion Flatbreads are a savory and flavorful dish featuring caramelized onions, grilled vegetables, and melted cheese on a crispy flatbread base.

  • 2 large flatbreads or naan
  • 2 tablespoons olive oil
  • 2 large yellow onions, thinly sliced
  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into rounds
  • 1 cup mushrooms, sliced
  • 1 teaspoon balsamic vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded Gruyère or mozzarella cheese
  • 1/4 teaspoon dried thyme
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook, stirring frequently, until deeply caramelized, about 20-25 minutes. Stir in balsamic vinegar and cook for another minute. Set aside.
  2. While the onions are caramelizing, grill or sauté the bell pepper, zucchini, and mushrooms with remaining olive oil until tender and lightly charred, about 8-10 minutes. Season with salt, pepper, and thyme.
  3. Preheat oven to 400°F (200°C).
  4. Place flatbreads on a baking sheet. Spread caramelized onions evenly on each flatbread.
  5. Top with grilled vegetables and sprinkle with shredded cheese.
  6. Bake for 8-10 minutes, or until cheese is melted and bubbly.
  7. Remove from oven and garnish with fresh parsley if desired. Slice and serve warm.

Notes

  • Use store-bought or homemade flatbreads for convenience.
  • Gruyère gives a classic French onion flavor, but mozzarella works well too.
  • Customize with other seasonal vegetables if desired.
