  • juice of 1 lime

For the avocado corn salsa:

  • 1 ripe avocado (diced)
  • 1 cup grilled or canned corn (drained)
  • 1/4 cup red onion (finely diced)
  • 1/4 cup chopped cilantro
  • juice of 1 lime
  • salt and pepper to taste

For the creamy sauce:

  • 1/2 cup sour cream or Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon lime juice
  • 1/2 teaspoon hot sauce (optional)
  • salt to taste

For serving:

  • 2 cups cooked rice or quinoa
  • shredded lettuce
  • lime wedges
  • extra cilantro for garnish

Instructions

  1. Marinate the shrimp: In a bowl, toss shrimp with olive oil, chili powder, smoked paprika, garlic powder, cumin, salt, and lime juice. Let marinate for 10–15 minutes.
  2. Grill the shrimp: Preheat grill or grill pan over medium-high heat and cook shrimp for 2–3 minutes per side, until opaque and lightly charred.
  3. Prepare the avocado corn salsa: Mix diced avocado, corn, red onion, cilantro, lime juice, salt, and pepper. Set aside.
  4. Make the creamy sauce: Whisk together sour cream, mayo, lime juice, hot sauce, and salt until smooth.
