Grilled Corn on the Cob with Chili Lime Butter

A smoky and flavorful grilled corn on the cob, slathered in zesty chili lime butter for the perfect summer side dish.

  • 4 ears of corn, husked
  • 2 tablespoons unsalted butter, softened
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh lime juice
  • 1 teaspoon lime zest
  • Salt to taste
  • Chopped fresh cilantro (optional, for garnish)
  • Lime wedges (for serving)

Instructions

  1. Preheat your grill to medium-high heat.
  2. In a small bowl, mix together the softened butter, chili powder, paprika, cayenne pepper (if using), lime juice, lime zest, and salt.
  3. Brush the corn cobs lightly with oil or a bit of the chili lime butter.
  4. Place the corn directly on the grill grates. Grill for 10-15 minutes, turning every few minutes, until the kernels are tender and slightly charred.
  5. Remove from the grill and brush generously with the prepared chili lime butter.
  6. Garnish with chopped cilantro if desired, and serve with lime wedges on the side.

Notes

  • Soak corn in water for 15 minutes before grilling if you prefer to leave the husks on.
  • Adjust spice level by varying the amount of cayenne pepper.
  • This butter can be made ahead and stored in the refrigerator.
