- 4 ears of corn, husked
- 2 tablespoons unsalted butter, softened
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- Salt to taste
- Chopped fresh cilantro (optional, for garnish)
- Lime wedges (for serving)
Instructions
- Preheat your grill to medium-high heat.
- In a small bowl, mix together the softened butter, chili powder, paprika, cayenne pepper (if using), lime juice, lime zest, and salt.
- Brush the corn cobs lightly with oil or a bit of the chili lime butter.
- Place the corn directly on the grill grates. Grill for 10-15 minutes, turning every few minutes, until the kernels are tender and slightly charred.
- Remove from the grill and brush generously with the prepared chili lime butter.
- Garnish with chopped cilantro if desired, and serve with lime wedges on the side.
Notes
- Soak corn in water for 15 minutes before grilling if you prefer to leave the husks on.
- Adjust spice level by varying the amount of cayenne pepper.
- This butter can be made ahead and stored in the refrigerator.
