For the Chicken:

  • 1 1/2 lbs boneless skinless chicken thighs
  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • juice of 1 lime

For the Spiced Mayo:

  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon hot sauce
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • salt to taste

For the Avocado Salsa:

  • 2 ripe avocados (diced)
  • 1 small red onion (finely chopped)
  • 1 small tomato (diced)
  • 1/4 cup chopped fresh cilantro
  • juice of 1 lime
  • salt and pepper to taste

To Assemble:

  • 8 small corn or flour tortillas
  • extra lime wedges
  • chopped cilantro (optional for garnish)

Instructions

  1. Marinate the Chicken: In a large bowl, combine olive oil, cumin, smoked paprika, chili powder, garlic powder, salt, pepper, and lime juice. Add the chicken thighs and toss to coat evenly. Cover and marinate in the fridge for at least 30 minutes.
  2. Grill the Chicken: Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5–6 minutes per side, or until cooked through and nicely charred. Let rest for 5 minutes, then slice or chop into bite-sized pieces.
  3. Prepare the Spiced Mayo and Avocado Salsa: While the chicken grills, mix all spiced mayo ingredients in a small bowl until smooth and refrigerate until ready to use. In another bowl, gently toss together avocado, onion, tomato, cilantro, lime juice, salt, and pepper for the salsa.
  4. Assemble the Tacos: Warm the tortillas on the grill or in a skillet. Spread a spoonful of spiced mayo on each tortilla, top with grilled chicken and avocado salsa. Garnish with extra cilantro and lime wedges if desired. Serve immediately.
