  • 1 tablespoon olive oil

Additional:

  • 2 cups cooked rice or quinoa
  • For the Creamy Garlic Sauce:
  • 1/2 cup plain Greek yogurt or sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1/2 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 12 tablespoons water (to thin, as needed)

Instructions

  1. Preheat the Grill: Preheat a grill or grill pan over medium-high heat.
  2. Prepare the Chicken: Rub the chicken with olive oil, garlic powder, paprika, salt, and pepper. Grill for 5–7 minutes per side or until fully cooked.
  3. Grill the Broccoli: Toss broccoli with olive oil, salt, and pepper. Grill or roast at 400°F (204°C) for 15–20 minutes.
  4. Make the Sauce: Whisk together Greek yogurt, mayonnaise, lemon juice, garlic, Dijon mustard, salt, pepper, and water.
  5. Assemble: Divide rice or quinoa between bowls, top with chicken, broccoli, and creamy garlic sauce.
