Bread:

  • 8 slices thick-cut white bread

Butter:

  • 2 tablespoons butter (softened)

Cheese:

  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese

Seasonings:

  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika (optional)

Other:

  • olive oil spray or brush-on for grilling
  • wooden skewers (soaked in water if grilling)

Instructions

  1. Prepare the Sandwiches: Butter one side of each bread slice. Sprinkle cheddar and mozzarella cheese on the unbuttered side of 4 slices. Top with remaining slices, buttered side out. Add garlic powder and paprika.
  2. Grill the Sandwiches: Grill on a skillet or grill over medium heat until golden brown and cheese melts, about 3-4 minutes per side.
  3. Cut and Skewer: Cut sandwiches into quarters. Thread onto skewers. Grill for 1-2 minutes more per side.
