  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon black pepper
  • For the Chicken:

  • 4 boneless skinless chicken breasts
  • For Grilling:

  • 1 can pineapple rings (or 1 fresh pineapple, peeled and sliced)
  • 1 tablespoon vegetable oil (for grilling)
  • For Garnish:

  • Chopped green onions and sesame seeds (optional)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, pineapple juice, rice vinegar, sesame oil, garlic, ginger, and black pepper.
  2. Marinate the Chicken: Place chicken breasts in a resealable plastic bag or shallow dish and pour marinade over them. Refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the Grill: Preheat grill to medium-high heat. Brush grill grates with vegetable oil.
  4. Grill the Chicken: Remove chicken from marinade and grill for 6–7 minutes per side, or until internal temperature reaches 165°F.
  5. Grill the Pineapple: While grilling chicken, add pineapple slices to the grill and cook for 2–3 minutes per side, until grill marks appear and they caramelize slightly.
  6. Serve: Serve grilled chicken topped with grilled pineapple and garnish with green onions and sesame seeds if desired.

Notes

  • For extra flavor, reserve a portion of the marinade before adding the raw chicken and simmer it to use as a glaze or sauce.
