  • 8 small corn tortillas
  • 1 (15 oz) can chickpeas (drained and rinsed)
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado (sliced)
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup chopped fresh herbs (like parsley, basil, or cilantro)
  • 1/2 cup crumbled feta cheese (optional)

For the Green Goddess Sauce:

  • 1/2 avocado
  • 1/4 cup plain Greek yogurt (or dairy-free yogurt)
  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1 clove garlic
  • 2 tablespoons chopped chives
  • 2 tablespoons chopped parsley
  • 1 tablespoon chopped tarragon or basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat oven to 400°F.
