For the meatballs:
1pound ground beef or lamb
2 cloves garlic (minced)
2 tablespoons red onion (finely chopped)
2 tablespoons chopped fresh parsley
1 tablespoon fresh mint (optional)
1 teaspoon dried oregano
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil for cooking
For the bowl:
2cups cooked white or brown rice
1cup cucumber (diced)
1cup cherry tomatoes (halved)
1/4cup red onion (thinly sliced)
1/4cup Kalamata olives (halved)
1/4cup crumbled feta cheese
2 tablespoons chopped fresh parsley or dill
For the tzatziki:
1/2cup plain Greek yogurt
1/4cup cucumber (grated and squeezed dry)
1 clove garlic (minced)
1 teaspoon lemon juice
1 teaspoon olive oil
pinch of salt and pepper
Instructions
Prepare the meatballs: In a mixing bowl, combine ground meat, garlic, red onion, parsley, mint, oregano, cumin, salt, and pepper. Form into small meatballs and cook in olive oil until browned and cooked through.
Make the tzatziki: Mix yogurt, grated cucumber, garlic, lemon juice, olive oil, salt, and pepper. Chill until ready.
Assemble the bowl: Divide rice between bowls, top with meatballs, cucumbers, tomatoes, onions, olives, feta, and tzatziki. Garnish with herbs and serve.
