Description

A zesty and fragrant Greek Lemon Rice, perfectly seasoned with garlic, onions, and fresh lemon juice. Ideal as a side dish or base for grilled meats and vegetables.


Ingredients

  • 1 cup long grain white rice
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups chicken or vegetable broth
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
  2. In a medium saucepan, heat olive oil over medium heat.
  3. Add chopped onion and cook until soft and translucent, about 3–4 minutes.
  4. Stir in minced garlic and cook for another 30 seconds.
  5. Add the rice and sauté for 2 minutes, stirring frequently.
  6. Pour in the broth, lemon juice, and lemon zest. Season with salt and pepper.
  7. Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
  8. Remove from heat and let it sit, covered, for 5 minutes.
  9. Fluff with a fork and stir in chopped parsley before serving.

Notes

  • Use basmati rice for a fluffier texture.
  • Adjust lemon juice to taste depending on your preference for tanginess.
  • Add dill or mint for extra herbal flavor.
