Description
A zesty and fragrant Greek Lemon Rice, perfectly seasoned with garlic, onions, and fresh lemon juice. Ideal as a side dish or base for grilled meats and vegetables.

- 1 cup long grain white rice
- 2 tablespoons olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups chicken or vegetable broth
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Rinse the rice under cold water until the water runs clear. Drain and set aside.
- In a medium saucepan, heat olive oil over medium heat.
- Add chopped onion and cook until soft and translucent, about 3–4 minutes.
- Stir in minced garlic and cook for another 30 seconds.
- Add the rice and sauté for 2 minutes, stirring frequently.
- Pour in the broth, lemon juice, and lemon zest. Season with salt and pepper.
- Bring to a boil, then reduce heat to low, cover, and simmer for 18–20 minutes or until the rice is tender and liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff with a fork and stir in chopped parsley before serving.
Notes
- Use basmati rice for a fluffier texture.
- Adjust lemon juice to taste depending on your preference for tanginess.
- Add dill or mint for extra herbal flavor.
