A delightful and refreshing Gnocchi Caprese Salad that combines pillowy gnocchi with juicy cherry tomatoes, creamy mozzarella, and fresh basil, all tossed in a balsamic glaze dressing. Perfect for a light lunch or as a side dish for any meal.

Ingredients

Gnocchi:

  • 1 pound store-bought or homemade gnocchi
  • 1 tablespoon olive oil

Caprese Salad:

  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella pearls or diced mozzarella
  • 1/4 cup fresh basil leaves, torn or chopped
  • 2 tablespoons balsamic glaze
  • Salt and black pepper to taste

Instructions

  1. Cook the Gnocchi: Bring a pot of salted water to a boil. Cook the gnocchi according to package instructions until they float to the top, about 2–3 minutes. Drain and rinse under cold water.
  2. Prepare the Salad: In a large bowl, combine the cooled gnocchi, cherry tomatoes, mozzarella, and basil. Season with salt and pepper.
  3. Finish and Serve: Drizzle the salad with balsamic glaze just before serving. Toss gently to coat. Serve chilled or at room temperature.

Notes

  • For extra flavor, lightly pan-fry the cooked gnocchi in a bit of olive oil until golden before tossing with the salad.
  • Add arugula or avocado for a fresh twist.
