Gnocchi:
- 2 lbs potatoes, boiled and mashed

- 1 can (28 oz) crushed tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
Topping:
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish
Instructions
- Prepare the Gnocchi: In a large bowl, combine the mashed potatoes, flour, egg, salt, and pepper. Knead until a dough forms. Roll the dough into ropes and cut into bite-sized pieces. Boil the gnocchi in salted water until they float, then drain.
- Make the Sauce: In a saucepan, heat olive oil and sauté garlic until fragrant. Add crushed tomatoes, oregano, salt, and pepper. Simmer for 15-20 minutes.
- Assemble: Preheat the oven. Toss cooked gnocchi with the tomato sauce and transfer to a baking dish. Top with mozzarella cheese.
- Bake: Bake the gnocchi until the cheese is melted and bubbly. Garnish with fresh basil before serving.
Notes
- You can add cooked Italian sausage or veggies to the sauce for extra flavor.
- Make sure not to overwork the gnocchi dough to keep them light and fluffy.
- Freshly grated Parmesan cheese can be added on top before serving.
