Gnocchi:

  • 2 lbs potatoes, boiled and mashed
  • 2 cups all-purpose flour
  • 1 egg, beaten
  • Salt and pepper to taste

Sauce:

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste

Topping:

  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Prepare the Gnocchi: In a large bowl, combine the mashed potatoes, flour, egg, salt, and pepper. Knead until a dough forms. Roll the dough into ropes and cut into bite-sized pieces. Boil the gnocchi in salted water until they float, then drain.
  2. Make the Sauce: In a saucepan, heat olive oil and sauté garlic until fragrant. Add crushed tomatoes, oregano, salt, and pepper. Simmer for 15-20 minutes.
  3. Assemble: Preheat the oven. Toss cooked gnocchi with the tomato sauce and transfer to a baking dish. Top with mozzarella cheese.
  4. Bake: Bake the gnocchi until the cheese is melted and bubbly. Garnish with fresh basil before serving.

Notes

  • You can add cooked Italian sausage or veggies to the sauce for extra flavor.
  • Make sure not to overwork the gnocchi dough to keep them light and fluffy.
  • Freshly grated Parmesan cheese can be added on top before serving.
