  • 4 large carrots, peeled and sliced
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, chopped
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Brown the Beef: Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches, ensuring all sides are seared, then set aside.
  2. Sauté Aromatics: In the same pot, add chopped onion and cook until softened, about 5 minutes. Add garlic and cook for another minute. Stir in the tomato paste, thyme, rosemary, and bay leaves.
  3. Simmer: Return the beef to the pot, then pour in the beef broth and red wine. Bring to a boil, then reduce heat to low and simmer covered for 1.5 hours.
  4. Add Vegetables: Add carrots, potatoes, and celery, and continue to cook for another 45 minutes, or until vegetables and beef are tender.
  5. Thicken: Stir in the cornstarch slurry and cook for an additional 5–10 minutes until the stew thickens.
  6. Season and Serve: Season with salt and pepper to taste. Remove bay leaves and garnish with fresh parsley if desired before serving.
