Cauliflower & Mushrooms:
1 medium head cauliflower, cut into florets
10oz cremini or white mushrooms, halved
3 tablespoons olive oil
4 garlic cloves, minced
1 teaspoon dried thyme
1/2 teaspoon smoked paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon chopped fresh parsley
juice of 1/2 lemon
Instructions
Preheat oven: Preheat oven to 425°F.
Prepare vegetables: In a large mixing bowl, combine cauliflower, mushrooms, olive oil, garlic, thyme, paprika, salt, and pepper. Toss well.
Roast: Spread the mixture on a baking sheet. Roast for 25–30 minutes, stirring halfway through.
Finish: Sprinkle with parsley and lemon juice before serving.
