8oz mushrooms, halved or quartered
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme or Italian seasoning
1/2 teaspoon smoked paprika
Salt and black pepper to taste

2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
Instructions
Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
Prepare Vegetables: In a large bowl, toss cauliflower and mushrooms with olive oil, garlic, thyme, paprika, salt, and pepper until well coated.
