Potato Pops:

  • 4 large potatoes (peeled and diced)
  • 4 cloves garlic (minced)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley (chopped)
  • 1 large egg
  • 1/2 cup breadcrumbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • vegetable oil for frying

Instructions

  1. Boil and Mash Potatoes: Boil diced potatoes in salted water until tender, about 15 minutes. Drain and mash until smooth.
  2. Prepare Potato Mixture: Stir in minced garlic, cheddar cheese, Parmesan cheese, parsley, egg, salt, and pepper until well combined.
  3. Form and Coat: Form mixture into small bite-sized balls. Roll each ball in breadcrumbs to coat evenly.
  4. Fry: Heat vegetable oil in a deep skillet over medium heat. Fry potato pops in batches for 3–4 minutes or until golden brown and crispy. Drain on paper towels.
  5. Serve: Serve warm with your favorite dipping sauce.
