4 medium russet potatoes
Garlic Butter Mixture:
3 tablespoons unsalted butter, melted
2 tablespoons olive oil
4 cloves garlic, minced

1/2 teaspoon paprika

1/3cup grated Parmesan cheese

Instructions
Preheat the oven: Preheat the oven to 425°F (220°C).
Prepare the potatoes: Wash and scrub the potatoes. Slice thin slits across the top of each potato, without cutting all the way through.
Make the butter mixture: In a small bowl, combine melted butter, olive oil, garlic, salt, pepper, thyme, and paprika.
Coat the potatoes: Place the potatoes on a baking sheet and brush with the butter mixture, ensuring it gets into the slits.
Bake: Bake for 45 minutes, then sprinkle Parmesan cheese over the tops of the potatoes. Bake for an additional 10-15 minutes until crispy.
Garnish and serve: Garnish with chopped parsley before serving.

Yukon Gold potatoes can be used for a creamier texture.
