Ingredients
Scale
For the Chicken Skewers
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
- 3 tablespoons olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 tablespoon lemon pepper seasoning
- 3 cloves garlic, minced
- Salt, to taste
- Wooden skewers (soaked in water for at least 30 minutes)
For the Garlic Parmesan Sauce
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- ½ cup grated Parmesan cheese
- 1 tablespoon fresh parsley, chopped
Instructions
- Marinate Chicken: In a bowl, combine olive oil, lemon juice, lemon pepper seasoning, minced garlic, and salt. Add the chicken pieces and toss thoroughly to coat all pieces evenly. Cover and refrigerate for at least 1 hour, or up to 24 hours for deeper flavor infusion.
- Prepare Air Fryer and Skewers: Preheat your air fryer to 380°F (190°C) if necessary. While waiting, thread the marinated chicken pieces onto the soaked wooden skewers, making sure they fit comfortably without crowding.
- Air Fry Chicken: Arrange the chicken skewers in a single layer inside the air fryer basket. Optionally, lightly spray with cooking spray for enhanced crispness. Cook the skewers for 12 to 15 minutes, flipping them halfway through cooking to ensure even browning and full internal cooking.
- Make Garlic Parmesan Sauce: While the chicken cooks, melt the butter in a medium saucepan over medium heat. Add the minced garlic and sauté for about 1 to 2 minutes until fragrant but not browned. Remove from heat and stir in the grated Parmesan cheese and chopped fresh parsley until smooth and combined.
- Serve: Once the chicken skewers are cooked through, brush them generously with the warm garlic Parmesan sauce. Serve immediately with extra sauce on the side for dipping, ensuring each bite is flavorful and moist.
Notes
- Soak wooden skewers in water for at least 30 minutes to prevent them from burning during cooking.
- Marinating the chicken overnight intensifies the flavor and tenderness.
- You can substitute wooden skewers with metal ones if preferred.
- If you don’t have an air fryer, these skewers can also be grilled or broiled in an oven.
- For a spicier kick, add a pinch of red pepper flakes to the marinade or sauce.
