  • 4 boneless, skinless chicken thighs
  • 1.5 lbs baby potatoes, halved
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine olive oil, minced garlic, Parmesan cheese, Italian seasoning, paprika, salt, and pepper.
  3. Add the chicken thighs and halved baby potatoes to the bowl and toss until well coated.
  4. Spread the chicken and potatoes evenly on a baking sheet or oven-safe pan.
  5. Bake for 35–40 minutes, or until the chicken is fully cooked and potatoes are golden and tender. Flip halfway through for even browning.
  6. Optional: Broil for 2-3 minutes at the end for extra crispiness.
  7. Garnish with chopped parsley before serving.

  • You can substitute chicken breasts if desired, but adjust cooking time accordingly.
