  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter
  • 3 cups cauliflower florets
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

For Serving:

  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon lemon juice (optional)
  • Grated Parmesan for topping (optional)

Instructions

  1. Heat olive oil and butter: In a large skillet over medium-high heat, heat olive oil and butter.
  2. Cook cauliflower: Add cauliflower florets and cook for 5–7 minutes until lightly browned and tender.
  3. Add mushrooms: Add sliced mushrooms and cook for another 5 minutes until soft and browned.
  4. Season: Stir in garlic, thyme, paprika, salt, and pepper. Cook for 1–2 more minutes.
  5. Finish and serve: Remove from heat, stir in lemon juice and parsley. Top with Parmesan if desired. Serve warm.
