Pasta:

  • 12 oz fettuccine or spaghetti

Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • 16 oz mushrooms (sliced – cremini, white button, or a mix)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water
  • 2 tablespoons chopped fresh parsley (optional)

Instructions

  1. Cook the Pasta: Cook pasta in a large pot of salted boiling water according to package instructions. Reserve ½ cup of the pasta water, then drain and set aside.
  2. Sauté Mushrooms: Heat olive oil and butter in a large skillet over medium heat. Add garlic and cook until fragrant. Add mushrooms, salt, pepper, and thyme. Sauté until mushrooms are golden brown and tender.
  3. Combine: Add cooked pasta to the skillet with Parmesan cheese. Toss to combine, adding reserved pasta water until the sauce coats the noodles.
  4. Serve: Sprinkle with parsley and serve warm with extra Parmesan if desired.
