Marinade:

  • 1 1/2 lbs boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 3 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 tablespoon fresh parsley (chopped)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Kabobs:

  • 1 red bell pepper (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)
  • 1 red onion (cut into chunks)
  • Metal or soaked wooden skewers

Instructions

  1. Prepare Marinade: In a large bowl or zip-top bag, combine olive oil, lemon juice, garlic, rosemary, parsley, oregano, salt, and pepper. Add the chicken cubes and toss to coat evenly. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours.

  3. Assemble Kabobs: Thread chicken, bell peppers, and onion alternately onto skewers.
