Chicken:

  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces

Skillet:

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 (16-ounce) package shelf-stable potato gnocchi
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups fresh baby spinach
  • Chopped parsley for garnish (optional)

Instructions

  1. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through, about 6–7 minutes. Transfer to a plate.
  2. Sauté Gnocchi: In the same skillet, melt butter and add gnocchi. Cook until golden on the outside, about 3–4 minutes. Stir in garlic and cook for 30 seconds.
  3. Add Sauce: Pour in chicken broth and heavy cream. Add thyme, Parmesan, and cooked chicken. Bring to a gentle simmer and cook for 4–5 minutes until the sauce thickens.
  4. Finish: Stir in spinach until wilted. Remove from heat, garnish with parsley, and serve hot.

Notes

  • You can add mushrooms, sun-dried tomatoes, or red pepper flakes for extra flavor.
  • For a lighter version, use half-and-half instead of cream.
