1 (16-ounce) package shelf-stable potato gnocchi
4 cloves garlic, minced
1cup chicken broth
1cup heavy cream
1/2cup grated Parmesan cheese
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
2cups fresh baby spinach
Chopped parsley for garnish (optional)
Instructions
Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken, season with salt and pepper, and cook until browned and cooked through, about 6–7 minutes. Transfer to a plate.
Add Sauce: Pour in chicken broth and heavy cream. Add thyme, Parmesan, and cooked chicken. Bring to a gentle simmer and cook for 4–5 minutes until the sauce thickens.
Finish: Stir in spinach until wilted. Remove from heat, garnish with parsley, and serve hot.
Notes
You can add mushrooms, sun-dried tomatoes, or red pepper flakes for extra flavor.
For a lighter version, use half-and-half instead of cream.
