For the Steak Bites:

  • 1 pound sirloin steak, cut into 1-inch cubes

For the Potatoes:

  • 1 1/2 pounds baby potatoes, halved or quartered
  • 3 tablespoons olive oil, divided
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried rosemary or thyme
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Cook Potatoes: In a large skillet over medium heat, add 2 tablespoons of olive oil. Cook potatoes with salt and pepper until golden and tender. Transfer to a plate.
  2. Sear Steak: Add remaining olive oil to the skillet. Season steak with salt and pepper. Sear in batches until browned and cooked to desired doneness.
  3. Combine Ingredients: Reduce heat, return potatoes to skillet. Add butter, garlic, and herbs. Cook until fragrant and butter coats steak and potatoes.
  4. Serve: Sprinkle with parsley and serve hot.
