12 lasagna noodles
1lb large shrimp, peeled and deveined
4 tbsp unsalted butter
6 cloves garlic, minced
1cup heavy cream
1cup chicken broth
1cup grated Parmesan cheese
2cups shredded mozzarella cheese
2 tbsp olive oil
1 tsp lemon zest
1 tbsp fresh lemon juice
1 tbsp fresh parsley, chopped
Salt and pepper to taste
1 tsp red pepper flakes (optional)
Instructions
Preheat the oven to 375°F (190°C).
Cook the lasagna noodles according to package instructions, drain, and set aside.
In a large skillet, melt the butter and olive oil over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using), and cook until pink, about 3-4 minutes. Remove the shrimp and set aside.
In the same skillet, add the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese. Let the mixture simmer for 5-7 minutes, allowing it to thicken slightly.
Add the lemon zest, lemon juice, and parsley, then return the shrimp to the skillet. Stir to combine and remove from heat.
In a baking dish, spread a thin layer of the garlic butter shrimp mixture on the bottom. Add a layer of lasagna noodles, then top with more of the shrimp mixture and a generous amount of shredded mozzarella.
Repeat the layering process until all ingredients are used, finishing with a layer of mozzarella cheese on top.
Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
Let the lasagna rest for 10 minutes before serving. Garnish with additional parsley if desired.
Notes
For extra creaminess, you can add more heavy cream or cream cheese to the sauce.
If you prefer a spicier dish, add more red pepper flakes to the shrimp mixture.
This dish can be made ahead of time and stored in the refrigerator for up to 2 days before baking.
