  • 1 cup chicken broth

  • 2 cups shredded mozzarella cheese
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • 1 tsp red pepper flakes (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions, drain, and set aside.
  3. In a large skillet, melt the butter and olive oil over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
  4. Add the shrimp to the skillet, season with salt, pepper, and red pepper flakes (if using), and cook until pink, about 3-4 minutes. Remove the shrimp and set aside.
  5. In the same skillet, add the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese. Let the mixture simmer for 5-7 minutes, allowing it to thicken slightly.
  6. Add the lemon zest, lemon juice, and parsley, then return the shrimp to the skillet. Stir to combine and remove from heat.
  7. In a baking dish, spread a thin layer of the garlic butter shrimp mixture on the bottom. Add a layer of lasagna noodles, then top with more of the shrimp mixture and a generous amount of shredded mozzarella.
  8. Repeat the layering process until all ingredients are used, finishing with a layer of mozzarella cheese on top.
  9. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  10. Let the lasagna rest for 10 minutes before serving. Garnish with additional parsley if desired.
