9 lasagna noodles
Shrimp Mixture:
1 1/2pounds large shrimp, peeled and deveined
3 tablespoons unsalted butter
4 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional)
Zest and juice of 1 lemon
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons chopped fresh parsley
Cheese Mixture:
2cups ricotta cheese
1cup shredded mozzarella cheese
1/2cup grated Parmesan cheese
1 large egg
2 tablespoons heavy cream
Instructions
Preheat oven and cook noodles: Preheat oven to 375°F. Cook lasagna noodles until al dente, drain, and set aside.
Prepare shrimp mixture: In a skillet, melt 3 tablespoons of butter with olive oil. Add garlic, shrimp, red pepper flakes, lemon zest, lemon juice, salt, and pepper. Cook until shrimp are pink. Remove from heat, stir in parsley.
Mix cheese: In a bowl, combine ricotta, egg, Parmesan, heavy cream, and salt.
Assemble lasagna: Butter a baking dish. Layer ricotta mixture, noodles, ricotta, shrimp, mozzarella. Repeat layers, finishing with mozzarella and shrimp. Bake covered, then uncovered until golden.
Rest and serve: Let the lasagna rest for 10 minutes before serving.
Notes
You can substitute scallops or crab for the shrimp.
