1lb shrimp, peeled and deveined
2cups broccoli florets
4 tbsp unsalted butter
5 cloves garlic, minced
1 tsp lemon juice
1 tsp lemon zest
1/2 tsp red pepper flakes (optional)
Salt and pepper, to taste
1 tbsp olive oil
1 tbsp fresh parsley, chopped
1/4cup grated Parmesan cheese (optional)
Instructions
Heat olive oil in a large skillet over medium heat.
Add the broccoli florets and cook for 3-4 minutes until tender-crisp. Remove and set aside.
In the same skillet, melt butter over medium heat. Add garlic and cook for 1-2 minutes until fragrant.
Add shrimp to the skillet and cook for 2-3 minutes per side until they turn pink and opaque.
Return the broccoli to the skillet and stir to combine with the shrimp and garlic butter sauce.
Add lemon juice, lemon zest, red pepper flakes, salt, and pepper to taste. Stir everything together.
Sprinkle with chopped parsley and grated Parmesan cheese (if using) before serving.
Notes
For a richer flavor, add more butter to the pan.
You can substitute the broccoli with other vegetables like asparagus or zucchini.
If you prefer a bit of heat, adjust the red pepper flakes according to your taste.
This recipe can easily be doubled for larger servings.
