  • 1 1/2 pounds boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 pound baby potatoes, halved

Garlic Butter Sauce:

  • 4 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons olive oil

Garnish:

Instructions

  1. Cook Potatoes: Heat olive oil in a large skillet over medium heat. Cook halved baby potatoes cut-side down for 10–12 minutes until golden and tender. Remove and set aside.
  2. Prepare Garlic Butter Sauce: In the same skillet, melt butter. Add minced garlic, cook for 1 minute until fragrant.
  3. Cook Chicken: Season chicken with paprika, onion powder, thyme, salt, and pepper. Add to skillet, cook for 6–8 minutes until browned and cooked through.
  4. Combine and Garnish: Return potatoes to the skillet, toss to coat in garlic butter. Cook for 2–3 minutes. Garnish with parsley before serving.

Notes

  • You can substitute chicken thighs with chicken breasts if preferred.
  • For extra crispiness, broil the skillet in the oven for 2–3 minutes at the end.
