1cup semisweet chocolate chips
2 teaspoons instant espresso powder
2 large eggs
1/2cup granulated sugar
1/4cup brown sugar
1/2 teaspoon vanilla extract

2 tablespoons unsweetened cocoa powder
1/4 teaspoon salt

Instructions
Preheat the oven: Preheat the oven to 350°F (175°C) and prepare a mini muffin tin.
Melt butter and chocolate: Melt butter and chocolate chips together until smooth. Stir in espresso powder.
Prepare batter: In a separate bowl, whisk eggs, sugars, and vanilla. Combine with chocolate mixture. Fold in dry ingredients.
Bake: Spoon batter into muffin tin, top with extra chocolate chips if desired, and bake for 10–12 minutes.
Cool and serve: Cool in the pan before transferring to a wire rack to cool completely.
Notes
