Yogurt Mixture:

  • 2 cups vanilla or plain Greek yogurt
  • 1 tablespoon honey or maple syrup (optional)

Parfait Layers:

  • 1 cup granola
  • 1 cup fresh strawberries (sliced)
  • 1 cup fresh blueberries
  • 1 cup diced mango or other fruit of choice

Garnish:

  • fresh mint for garnish (optional)

Instructions

  1. Prepare Yogurt: In a small bowl, mix the yogurt with honey or maple syrup if using, to lightly sweeten.
  2. Layer Parfaits: In 4 serving glasses or jars, layer 2 tablespoons of granola at the bottom of each. Add a layer of yogurt (about 1/4 cup), followed by a layer of mixed fruits. Repeat the layers until the glasses are filled, ending with fruit and a sprinkle of granola on top.
  3. Garnish and Serve: Garnish with fresh mint if desired. Serve immediately or refrigerate for up to 4 hours.

Notes

  • Use any combination of fruit such as kiwi, pineapple, raspberries, or peaches.
  • For added crunch, sprinkle chopped nuts or seeds on top just before serving.
