  • 1 cup granulated sugar
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 1/4 cups chopped frosted animal cookies (for folding in)

White Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1 cup white chocolate chips

Garnish:

  • 1 cup whipped topping or whipped cream
  • Extra frosted animal cookies and sprinkles for topping

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F (163°C) and grease a 9-inch springform pan. Combine crushed animal cookies and melted butter, press into the pan, and bake for 8–10 minutes. Let cool.
  2. Make the Filling: Beat cream cheese and sugar, then add sour cream, vanilla, and eggs. Fold in chopped animal cookies. Pour over crust and bake for 50–60 minutes.
  3. Chill the Cheesecake: Turn off the oven and let the cheesecake cool inside for 1 hour. Chill in the refrigerator for at least 4 hours or overnight.
  4. Prepare the Ganache: Heat heavy cream, pour over white chocolate chips, stir until smooth. Let cool slightly and pour over chilled cheesecake.
  5. Garnish and Serve: Top with whipped topping, animal cookies, and sprinkles before serving.
