Ingredients

Corn Salad:

  • canned whole kernel corn (drained)
  • diced red bell pepper
  • diced red onion or scallions
  • shredded cheddar cheese
  • mayonnaise
  • sour cream
  • lime juice
  • salt (to taste)

For Serving:

  • crushed Chili Cheese Fritos corn chips
  • optional cilantro or sliced jalapeño for garnish

Instructions
