Ingredients
Corn Salad:
canned whole kernel corn (drained)
diced red bell pepper
diced red onion or scallions
shredded cheddar cheese
mayonnaise
sour cream
lime juice
salt (to taste)
For Serving:
crushed Chili Cheese Fritos corn chips
optional cilantro or sliced jalapeño for garnish
Instructions
Corn Salad: In a large bowl, combine drained corn, chopped bell pepper and onion (or scallions), shredded cheddar, mayonnaise, sour cream, lime juice, and salt. Mix well, then refrigerate until ready to serve.
Serving: Just before serving, stir in crushed Chili Cheese Fritos corn chips and garnish with cilantro or jalapeño if desired.
Notes
