Ground Beef Mixture:

  • 1 pound ground beef
  • 1 small yellow onion, diced
  • 1 packet taco seasoning
  • 1 can chili beans (15 oz)
  • 1 can diced tomatoes with green chilies (10 oz, undrained)

Additional Ingredients:

  • 2 cups shredded cheddar cheese
  • 1 bag Fritos corn chips (9.25 oz)
  • Chopped green onions and sour cream for garnish

Instructions

  1. Preheat oven and prepare baking dish: Preheat oven to 375°F and lightly grease a 9×13-inch baking dish.
  2. Cook the ground beef: In a large skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease.
  3. Combine ingredients: Stir in taco seasoning, chili beans, and diced tomatoes. Simmer for 5 minutes.
  4. Layer the dish: Spread half the Fritos in the baking dish, add the beef mixture, top with cheese, and sprinkle remaining Fritos on top.
  5. Bake: Bake for 15–20 minutes until cheese is melted.
  6. Serve: Let rest for 5 minutes, then garnish as desired with green onions and sour cream.
