Jalapeño Popper Filling:
8oz cream cheese, softened
1cup shredded cheddar cheese
1/2cup diced pickled jalapeños
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Breading:
1cup all-purpose flour
2 eggs, beaten
1cup breadcrumbs
Additional:
10–12 jalapeños, halved and deseeded
Oil for frying
Instructions
Prepare the Filling: In a bowl, mix together the cream cheese, cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, and pepper until well combined.
Fill the Jalapeños: Spoon the cream cheese mixture into the halved and deseeded jalapeños.
Breading: Set up three separate bowls with flour, beaten eggs, and breadcrumbs. Dredge each filled jalapeño first in flour, then egg, and finally breadcrumbs, ensuring they are evenly coated.
Fry: Heat oil in a deep pan and fry the breaded jalapeños in batches until golden brown and crispy, about 2-3 minutes per side.
Serve: Drain on a paper towel-lined plate and serve hot with your favorite dipping sauce.
Notes
For a spicier kick, leave some of the jalapeño seeds in the filling.
Make sure the oil is hot enough to ensure a crispy coating.
These poppers can also be baked in a preheated oven at 375°F (190°C) for a healthier alternative.
