Ingredients

Dry Ingredients:

1 cup yellow cornmeal
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon sugar (optional)

Wet Ingredients:

1 cup buttermilk
1 large egg
1/4 cup finely chopped onion (optional)

Vegetable oil for frying

Instructions

  1. Prepare the Batter: In a large bowl, whisk together cornmeal, flour, baking powder, baking soda, salt, and sugar. In a separate bowl, mix buttermilk and egg until well combined. Pour wet ingredients into dry and stir just until incorporated. Fold in chopped onion if using.
  2. Fry the Cornbread: Heat vegetable oil in a skillet over medium heat. Spoon batter into the hot oil, flatten slightly, and fry for 2–3 minutes per side until golden brown and crispy. Drain on paper towels.
