Instructions

  1. Dice peaches and tomatoes: If using, into bite-sized pieces.
  2. Finely chop red onion, jalapeño, and cilantro.

  3. In a mixing bowl: Combine peaches, tomato, onion, jalapeño, and cilantro.
  4. Squeeze in lime juice, sprinkle with salt and pepper: Stir to combine.

  5. Optionally drizzle a bit of olive oil or add grated garlic: for extra depth.
