Description
A light, creamy, and vibrant green soup made from fresh peas, perfect for spring and early summer meals.

- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 4 cups fresh or frozen peas
- 4 cups vegetable broth
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup fresh mint leaves (optional)
- 1/2 cup heavy cream or coconut milk (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and cook until translucent, about 5 minutes.
- Add garlic and cook for another minute.
- Add peas and vegetable broth, bring to a boil.
- Reduce heat and simmer for 10 minutes, until peas are tender.
- Add salt, pepper, and mint if using.
- Use an immersion blender or transfer to a blender to puree until smooth.
- Stir in cream or coconut milk if desired, and heat through.
- Serve hot or chilled, garnished with fresh herbs or a swirl of cream.
Notes
- For a vegan version, use coconut milk instead of cream.
- Mint adds a refreshing flavor but can be omitted.
- Soup can be served hot or cold.
