Description

A light, creamy, and vibrant green soup made from fresh peas, perfect for spring and early summer meals.


Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups fresh or frozen peas
  • 4 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup fresh mint leaves (optional)
  • 1/2 cup heavy cream or coconut milk (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add garlic and cook for another minute.
  4. Add peas and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 10 minutes, until peas are tender.
  6. Add salt, pepper, and mint if using.
  7. Use an immersion blender or transfer to a blender to puree until smooth.
  8. Stir in cream or coconut milk if desired, and heat through.
  9. Serve hot or chilled, garnished with fresh herbs or a swirl of cream.

Notes

  • For a vegan version, use coconut milk instead of cream.
  • Mint adds a refreshing flavor but can be omitted.
  • Soup can be served hot or cold.
