Flank Steak:
1 1/2pounds flank steak (butterflied and pounded to 1/2 inch thick)
Caramelize Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly for 15–20 minutes until caramelized. Stir in balsamic vinegar and thyme, then let cool slightly.
Prepare Steak: Season butterflied flank steak with salt and pepper. Spread caramelized onions over the steak, sprinkle Gruyère cheese, and roll up tightly.
Cook Pinwheels: Sear in olive oil, then roast in a preheated oven until desired doneness. Rest before serving.
Notes
To make slicing easier, chill the rolled steak before cutting. You can also grill the pinwheels instead of roasting.
