Flank Steak:

  • 1 1/2 pounds flank steak (butterflied and pounded to 1/2 inch thick)

Caramelized Onions:

  • 2 tablespoons olive oil
  • 2 large yellow onions (thinly sliced)
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Additional:

  • 1 cup shredded Gruyère cheese
  • Salt and pepper to taste
  • Kitchen twine or toothpicks for securing

Instructions

  1. Caramelize Onions: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and cook slowly for 15–20 minutes until caramelized. Stir in balsamic vinegar and thyme, then let cool slightly.
  2. Prepare Steak: Season butterflied flank steak with salt and pepper. Spread caramelized onions over the steak, sprinkle Gruyère cheese, and roll up tightly.
