This French Onion Meatloaf combines the classic flavors of French onion soup with a hearty ground beef loaf, topped with a gooey layer of melted cheese. A comforting and flavorful twist on traditional meatloaf that’s sure to be a hit at the dinner table.

Meatloaf:

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 cup beef broth
  • 1/2 teaspoon garlic powder
  • 2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)
  • 1 1/4 cups breadcrumbs
  • 2 large eggs
  • 1/2 cup shredded Gruyère or Swiss cheese
  • 1/2 cup shredded mozzarella cheese

Caramelized Onions:

  • 2 large yellow onions, thinly sliced

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and grease a loaf pan or line it with parchment paper.
  2. Caramelize the onions: In a skillet over medium heat, heat olive oil and butter. Add the sliced onions, salt, and pepper. Cook for 20–25 minutes until deeply caramelized. Add Worcestershire sauce, garlic powder, and thyme, then stir in the beef broth. Simmer until liquid is absorbed.
  3. Prepare the meatloaf: Let the onion mixture cool slightly. In a mixing bowl, combine ground beef, breadcrumbs, eggs, half of the onion mixture, and shredded cheese. Shape into a loaf and place in the pan.
  4. Bake: Top with remaining onions and mozzarella cheese. Bake for 55–65 minutes until internal temperature reaches 160°F (71°C). Let rest before slicing.

Notes

  • For a richer flavor, add a splash of red wine to the onions while caramelizing.
  • You can substitute the cheeses with provolone or cheddar if desired.
  • Leftovers make great meatloaf sandwiches.
