  • 1 tablespoon olive oil
  • 3 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Soup Base:

  • 3 garlic cloves, minced
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)
  • 6 cups low-sodium chicken broth
  • 2 cups cooked shredded chicken
  • 1 tablespoon balsamic vinegar
  • 1/2 teaspoon black pepper

For Serving:

  • 4 slices crusty bread
  • 1 cup shredded Gruyère cheese

Instructions

  1. Caramelize Onions: In a large pot, melt the butter with the olive oil over medium heat. Add the sliced onions, sugar, and salt. Cook, stirring occasionally, for 25–30 minutes until deeply caramelized.
  2. Add Flavors: Stir in the garlic and thyme, cook for 1 more minute. Pour in the chicken broth and bring to a simmer.
  3. Finish Soup: Add the shredded chicken, balsamic vinegar, and black pepper. Simmer for 10–15 minutes to meld flavors.
  4. Prepare Bread and Cheese: Meanwhile, toast the bread slices until golden. Ladle the soup into oven-safe bowls, place a toast slice on top of each, and sprinkle generously with Gruyère cheese.
  5. Broil: Broil for 2–3 minutes until the cheese is melted and bubbly. Serve hot.

  • For extra richness, add a splash of white wine after caramelizing the onions.
