  • 1 pound ground beef
  • 1 small yellow onion (diced)
  • 1 packet (1 oz) dry French onion soup mix
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 8 ounces egg noodles (uncooked)
  • 1 cup shredded mozzarella cheese
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil: In a large skillet or Dutch oven, heat olive oil over medium heat.
  2. Brown the beef: Add ground beef, cook until browned, breaking it apart. Drain excess grease.
  3. Saute onion: Add diced onion, cook until softened.
  4. Add soup mix and liquids: Stir in French onion soup mix, beef broth, and cream of mushroom soup.
  5. Cook noodles: Add uncooked noodles, bring to a boil, then simmer covered for 10-12 minutes.
  6. Finish and serve: Stir in mozzarella cheese until melted. Season with salt and pepper. Garnish with parsley if desired.
