  • 2 large egg yolks (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon fine sea salt
  • 1 egg yolk mixed with 1 teaspoon water (for egg wash)

Instructions

  1. Cream the butter and sugar: In a large bowl, cream the butter and sugar together until light and fluffy.
  2. Add eggs and vanilla: Add the egg yolks and vanilla extract, beating until fully incorporated.
  3. Combine dry ingredients: Sift in the flour and salt, mix just until a soft dough forms.
  4. Chill the dough: Divide the dough in half, shape into disks, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.
  5. Preheat and roll: Preheat the oven to 350°F (175°C). Roll out dough, cut into rounds, and place on baking sheets.
  6. Egg wash and bake: Brush tops with egg wash, create a crosshatch pattern, bake for 12–15 minutes until golden.
  7. Cool and enjoy: Cool on the baking sheet before transferring to a wire rack to cool completely.
