Ingredients

Units Scale
  • 3 tablespoons unsalted butter (plus extra for greasing)
  • 1/4 cup granulated sugar (plus extra for dusting)
  • 3 tablespoons all-purpose flour
  • 1/2 cup whole milk
  • 1/2 teaspoon pure vanilla extract
  • 3 large eggs, separated
  • 1/4 teaspoon cream of tartar
  • Pinch of salt
  • Powdered sugar, for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and grease 4 ramekins with butter. Dust them with sugar and tap out the excess.
  2. In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly for about 1 minute to form a roux.
  3. Gradually whisk in the milk and cook until the mixture thickens. Remove from heat and stir in the vanilla extract.
  4. Let the mixture cool slightly, then whisk in the egg yolks one at a time.
  5. In a clean bowl, beat the egg whites with a pinch of salt and cream of tartar until soft peaks form. Gradually add the granulated sugar and continue beating until stiff peaks form.
  6. Gently fold the egg whites into the yolk mixture in batches, being careful not to deflate the mixture.
  7. Divide the batter evenly among the prepared ramekins. Run your thumb around the inside edge of each ramekin to help the soufflés rise evenly.
  8. Bake for 13-15 minutes until puffed and lightly golden. Do not open the oven door while baking.
  9. Dust with powdered sugar and serve immediately.

Notes

  • Serve immediately to enjoy the full height and texture of the soufflé.
  • Use room-temperature eggs for better volume.
  • You can add a pinch of lemon zest for a subtle citrus twist.
