2 tablespoons unsalted butter (plus more for greasing)
3 tablespoons all-purpose flour
1/2cup whole milk, warmed
1/4cup granulated sugar (plus more for dusting)
3 large eggs, separated
1/2 teaspoon vanilla extract
1/4 teaspoon cream of tartar
powdered sugar for dusting
Instructions
Preheat the oven and prepare ramekins: Preheat the oven to 375°F (190°C). Butter four 6-ounce ramekins and dust with granulated sugar.
Make the base: Melt butter in a saucepan, whisk in flour, then slowly add warm milk to form a paste. Cook until thickened, then stir in vanilla.
Prepare the egg mixture: Whisk in egg yolks one at a time. In a separate bowl, beat egg whites with cream of tartar and sugar until stiff peaks form.
Combine: Gently fold egg whites into the yolk mixture. Spoon into ramekins and bake.
Bake: Bake for 13–15 minutes until puffed and golden.
Serve: Dust with powdered sugar and serve immediately.
Notes
For a richer flavor, infuse the milk with a vanilla bean pod instead of extract.
