Units Scale

Ingredients for Fluffy Vanilla Soufflé:

  • 2 tablespoons unsalted butter (plus more for greasing)
  • 3 tablespoons all-purpose flour
  • 1/2 cup whole milk, warmed
  • 1/4 cup granulated sugar (plus more for dusting)
  • 3 large eggs, separated
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cream of tartar
  • powdered sugar for dusting

Instructions

  1. Preheat the oven and prepare ramekins: Preheat the oven to 375°F (190°C). Butter four 6-ounce ramekins and dust with granulated sugar.
  2. Make the base: Melt butter in a saucepan, whisk in flour, then slowly add warm milk to form a paste. Cook until thickened, then stir in vanilla.
  3. Prepare the egg mixture: Whisk in egg yolks one at a time. In a separate bowl, beat egg whites with cream of tartar and sugar until stiff peaks form.
  4. Combine: Gently fold egg whites into the yolk mixture. Spoon into ramekins and bake.
  5. Bake: Bake for 13–15 minutes until puffed and golden.
  6. Serve: Dust with powdered sugar and serve immediately.

Notes

  • For a richer flavor, infuse the milk with a vanilla bean pod instead of extract.
  • Soufflés are best enjoyed straight from the oven before they deflate.
