Description

These fluffy protein pancakes are made without protein powder, using wholesome ingredients like eggs, oats, and Greek yogurt to deliver a high-protein, satisfying breakfast.


Ingredients

  • 1 cup rolled oats
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1 ripe banana
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon (optional)
  • 1/2 tsp vanilla extract
  • 1/4 cup milk (dairy or plant-based)
  • Pinch of salt
  • Butter or oil for cooking


Instructions

  1. Add oats to a blender and blend until they form a fine flour.
  2. Add banana, eggs, Greek yogurt, milk, baking powder, cinnamon, vanilla extract, and salt to the blender.
  3. Blend until smooth and let the batter sit for 5 minutes to thicken slightly.
  4. Heat a nonstick skillet or griddle over medium heat and lightly grease with butter or oil.
  5. Pour 1/4 cup portions of batter onto the skillet and cook until bubbles form on the surface, about 2-3 minutes.
  6. Flip and cook the other side for 1-2 minutes until golden and cooked through.
