Instructions
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, salt, and sugar.
Combine Wet Ingredients: In another bowl, mix the milk, egg, melted butter, and vanilla extract until well combined.
Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and stir just until combined—do not overmix; a few lumps are okay. Let the batter rest for 5–10 minutes for extra fluffiness.
Cook the Pancakes: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil. Pour ¼ cup of batter per pancake onto the skillet. Cook for 2–3 minutes, or until bubbles form on the surface and the edges look set. Flip and cook another 1–2 minutes until golden brown. Repeat with remaining batter.
