Cake:

  • 1 1/2 cups shelled unsalted pistachios
  • 3/4 cup granulated sugar
  • 4 large eggs (room temperature)
  • 1/2 cup unsalted butter (melted and cooled)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Zest of 1 lemon

Ganache:

  • 1/2 cup heavy cream
  • 4 oz dark chocolate (chopped)
  • 1 tablespoon unsalted butter

Optional Toppings:

  • Chopped pistachios for garnish
  • Sea salt flakes

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and grease a 9-inch round cake pan. Line the bottom with parchment paper.
  2. Prepare the pistachios: Pulse the pistachios with 1/4 cup of sugar in a food processor until finely ground.
  3. Prepare the batter: Beat eggs and sugar until thick, then fold in ground pistachio mixture, melted butter, salt, extracts, and lemon zest. Pour batter into pan and bake.
  4. Make the ganache: Heat cream, pour over chocolate and butter, stir until smooth. Pour over cooled cake and garnish if desired.
  5. Chill and serve: Chill briefly to set the ganache before slicing and serving.

Notes

  • To make the cake dairy-free, use melted coconut oil instead of butter and dairy-free chocolate and cream alternatives.
  • This cake can also be baked in a loaf pan for a rustic presentation.
