Instructions

  1. Preheat oven and prepare baking sheet: Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Mix cookie dough: In a medium bowl, combine peanut butter, sugar, egg, vanilla extract, and baking soda until smooth. Add a pinch of salt if desired.
  3. Form cookie balls: Scoop tablespoon-sized portions of dough, roll into balls, and coat with extra sugar if preferred. Place on the baking sheet.
