Peanut Butter Cookies:
1cup creamy peanut butter
3/4cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon baking soda
pinch of salt (optional)
extra sugar for rolling (optional)
Instructions
Preheat oven and prepare baking sheet: Preheat the oven to 350°F and line a baking sheet with parchment paper.
Mix cookie dough: In a medium bowl, combine peanut butter, sugar, egg, vanilla extract, and baking soda until smooth. Add a pinch of salt if desired.
Form cookie balls: Scoop tablespoon-sized portions of dough, roll into balls, and coat with extra sugar if preferred. Place on the baking sheet.
Bake: Press each ball lightly with a fork, bake for 8–10 minutes until set and lightly golden.
Cool and serve: Allow the cookies to cool on the sheet for 5 minutes before transferring to a wire rack to cool completely.
