Wet Ingredients:

  • 3 ripe bananas (mashed)
  • 2 large eggs
  • 1/2 cup creamy peanut butter or almond butter
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

Dry Ingredients:

  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup rolled oats (optional for texture)
  • 1/2 cup chopped walnuts or chocolate chips (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper or grease it lightly.
  2. Mix wet ingredients: In a large bowl, whisk together the mashed bananas, eggs, nut butter, honey or maple syrup, and vanilla extract until smooth.
  3. Add dry ingredients: Stir in the cinnamon, baking soda, and salt. If using, fold in the oats and your choice of chopped walnuts or chocolate chips.
  4. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool and slice: Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
