  • 8 oz cooked shrimp, finely chopped
  • 4 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup mayonnaise
  • 1 teaspoon Cajun seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons chopped green onions
  • 2 tablespoons chopped fresh parsley (optional)
  • Hot sauce for drizzling (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Prepare the filling: In a medium bowl, combine chopped shrimp, cream cheese, cheddar cheese, mayonnaise, Cajun seasoning, garlic powder, paprika, salt, and pepper. Stir in green onions.
  3. Stuff the jalapeños: Spoon the shrimp mixture into each jalapeño half and place them on the baking sheet.
  4. Bake: Bake for 15–18 minutes until the jalapeños are tender and the filling is bubbly and golden.
